Zucchini and Garlic Hummus

This zucchini and garlic hummus is a refreshing twist on traditional hummus, with the added flavor of roasted zucchini and garlic.

Ingredients

  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Paprika - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Cumin - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Tahini - 2 tablespoons
  • Chickpeas - 1 can (15 oz), drained and rinsed
  • Garlic cloves - 3 cloves
  • Zucchini - 2 medium, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the sliced zucchini and garlic cloves on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.
  3. Roast in the oven for 15-20 minutes, or until the zucchini is tender and slightly browned.
  4. In a food processor, combine the roasted zucchini, garlic cloves, chickpeas, tahini, lemon juice, olive oil, cumin, salt, black pepper, and paprika.
  5. Blend until smooth and creamy, scraping down the sides as needed.
  6. Transfer the hummus to a serving bowl and garnish with fresh parsley.
  7. Serve with pita bread, crackers, or fresh vegetables.
