Jicama and Black Bean Salad

This refreshing and nutritious salad combines jicama, black beans, and a zesty lime dressing.

Ingredients

  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Red onion - 1/4 cup, thinly sliced
  • Cilantro - 1/4 cup, chopped
  • Red bell pepper - 1, diced
  • Black beans - 1 can, rinsed and drained
  • Jicama - 1 medium, peeled and julienned

Instructions

  1. In a large bowl, combine the jicama, black beans, red bell pepper, cilantro, and red onion.
  2. In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and black pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Refrigerate for at least 30 minutes to allow the flavors to meld.
