Hwae

Hwae is a traditional Korean dish made with fresh raw fish, vegetables, and a tangy dressing.

Ingredients

  • Toasted sesame seeds - 1 tablespoon
  • Red pepper flakes - 1/2 teaspoon
  • Sugar - 1 teaspoon
  • Rice vinegar - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Sesame oil - 2 tablespoons
  • Lettuce leaves - 4
  • Green onion - 2 stalks, chopped
  • Red onion - 1/2, thinly sliced
  • Carrot - 1, julienned
  • Cucumber - 1, thinly sliced
  • Fresh white fish fillets - 1 pound

Instructions

  1. Slice the fish fillets into thin strips and place them in a bowl.
  2. Add the cucumber, carrot, red onion, and green onion to the bowl.
  3. In a separate small bowl, whisk together the sesame oil, soy sauce, rice vinegar, sugar, and red pepper flakes to make the dressing.
  4. Pour the dressing over the fish and vegetables, and toss gently to combine.
  5. Cover the bowl and refrigerate for at least 10 minutes to allow the flavors to meld.
  6. To serve, arrange lettuce leaves on a plate and spoon the hwae mixture onto the leaves.
  7. Sprinkle with toasted sesame seeds.
