Halibut and Mango Salsa

This delicious halibut dish is served with a refreshing mango salsa.

Ingredients

  • Honey - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Cilantro - 2 tablespoons, chopped
  • Red onion - 1/4, finely chopped
  • Red bell pepper - 1/2, diced
  • Mango - 1, diced
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Halibut fillets - 2 fillets

Instructions

  1. Preheat the oven to 400°F.
  2. Season the halibut fillets with salt and black pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat.
  4. Add the halibut fillets to the skillet and cook for 2-3 minutes on each side, until golden brown.
  5. Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the halibut is cooked through.
  6. In a bowl, combine diced mango, red bell pepper, red onion, cilantro, lime juice, and honey. Mix well.
  7. Serve the halibut fillets with the mango salsa on top.
