Salmon Poke Bowl

This refreshing and healthy salmon poke bowl is made with fresh salmon, vegetables, and a flavorful sesame soy marinade.

Ingredients

  • Cooked rice - 2 cups
  • Lime juice - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Sesame seeds - 1 tablespoon
  • Green onion - 2 stalks, sliced
  • Carrot - 1, julienned
  • Avocado - 1, sliced
  • Cucumber - 1/2, diced
  • Salmon - 8 ounces, sushi-grade, cubed

Instructions

  1. In a bowl, combine the soy sauce, rice vinegar, sesame oil, and lime juice to make the marinade.
  2. Add the cubed salmon to the marinade and toss to coat. Let it marinate in the refrigerator for at least 10 minutes.
  3. In a serving bowl, place a bed of cooked rice.
  4. Arrange the marinated salmon, cucumber, avocado, carrot, and green onion on top of the rice.
  5. Sprinkle with sesame seeds.
  6. Serve the salmon poke bowl chilled and enjoy!
