Haddock Fish Cakes

These delicious haddock fish cakes are easy to make and are a great way to use leftover haddock. They're perfect for a light lunch or dinner.

Ingredients

  • Vegetable oil - For frying
  • Breadcrumbs - 1 cup
  • Salt and pepper - To taste
  • Dill - 1 tablespoon, chopped
  • Green onions - 2, finely chopped
  • Egg - 1, beaten
  • Potatoes - 2 large, boiled and mashed
  • Haddock fillets - 500 grams

Instructions

  1. Cook the haddock fillets in a steamer or in the oven until they are cooked through. Allow them to cool, then flake the fish.
  2. In a large bowl, combine the flaked haddock, mashed potatoes, beaten egg, green onions, dill, salt, and pepper. Mix until well combined.
  3. Shape the mixture into patties and coat each one in breadcrumbs.
  4. Heat the vegetable oil in a frying pan over medium heat. Fry the fish cakes for about 4-5 minutes on each side, or until they are golden brown and crispy.
  5. Drain the fish cakes on paper towels to remove excess oil.
  6. Serve the haddock fish cakes with tartar sauce or a squeeze of lemon.
