Spinach and Feta Flatbread

This delicious spinach and feta flatbread is a perfect appetizer or light meal. It's topped with fresh spinach, creamy feta cheese, and flavorful herbs.

Ingredients

  • Salt and pepper - To taste
  • Dried oregano - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Kalamata olives - 1/4 cup, pitted and sliced
  • Cherry tomatoes - 1/2 cup, halved
  • Red onion - 1/4 cup, thinly sliced
  • Feta cheese - 1/2 cup, crumbled
  • Fresh spinach - 2 cups
  • Flatbread - 1

Instructions

  1. Preheat the oven to 400°F.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  3. Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt and pepper.
  4. Place the flatbread on a baking sheet. Spread the cooked spinach evenly over the flatbread.
  5. Sprinkle crumbled feta cheese, sliced red onion, halved cherry tomatoes, and sliced Kalamata olives over the spinach.
  6. Sprinkle dried oregano, salt, and pepper over the toppings.
  7. Bake in the preheated oven for 10-12 minutes, or until the flatbread is crispy and the cheese is melted.
  8. Remove from the oven and let it cool slightly before slicing into wedges.
  9. Serve warm and enjoy!
