Greek Tzatziki Chicken Salad

This refreshing Greek salad features grilled chicken, crisp vegetables, and a tangy tzatziki dressing.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Fresh dill - 2 tablespoons, chopped
  • Kalamata olives - 1/4 cup, pitted and halved
  • Red onion - 1/4 cup, thinly sliced
  • Cherry tomatoes - 1 cup, halved
  • Cucumber - 1, diced
  • Greek yogurt - 1 cup
  • Chicken breasts - 2, boneless and skinless

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with salt, pepper, and olive oil.
  3. Grill the chicken for 6-8 minutes per side, or until cooked through. Let it rest for a few minutes, then slice it into strips.
  4. In a bowl, combine Greek yogurt, cucumber, cherry tomatoes, red onion, Kalamata olives, fresh dill, lemon juice, garlic, salt, and pepper. Mix well to make the tzatziki dressing.
  5. In a large salad bowl, combine the grilled chicken strips with mixed greens or your choice of salad greens.
  6. Pour the tzatziki dressing over the salad and toss to coat evenly.
