Mediterranean Chicken Gyro Salad

This Mediterranean-inspired salad features grilled chicken, fresh vegetables, and a tangy tzatziki dressing.

Ingredients

  • Salt and pepper - To taste
  • Dried oregano - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 1/4 cup, crumbled
  • Kalamata olives - 1/4 cup, pitted and halved
  • Red onion - 1/4 cup, thinly sliced
  • Tomato - 1, diced
  • Cucumber - 1, diced
  • Greek yogurt - 1/2 cup
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Chicken breast - 2, boneless and skinless

Instructions

  1. In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Mix well.
  2. Add the chicken breasts to the marinade and let them marinate for at least 15 minutes.
  3. Preheat the grill to medium-high heat.
  4. Grill the chicken for about 6-8 minutes per side, or until cooked through.
  5. Remove the chicken from the grill and let it rest for a few minutes. Then, slice it into thin strips.
  6. In a separate bowl, combine Greek yogurt, diced cucumber, diced tomato, sliced red onion, Kalamata olives, crumbled feta cheese, and chopped fresh parsley. Mix well to make the tzatziki dressing.
  7. Arrange the sliced chicken on a bed of mixed greens or lettuce.
  8. Drizzle the tzatziki dressing over the chicken and salad.
