Greek Tempeh Gyros

A delicious and healthy twist on the traditional Greek gyros, these tempeh gyros are packed with flavor and nutrients.

Ingredients

  • Lettuce - 1 cup, shredded
  • Red onion - 1/2, thinly sliced
  • Cucumber - 1, sliced
  • Tomato - 1, sliced
  • Tzatziki sauce - 1/2 cup
  • Pita bread - 4 pieces
  • Salt and pepper - To taste
  • Oregano - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Tempeh - 8 ounces, sliced

Instructions

  1. In a bowl, combine the olive oil, lemon juice, garlic, oregano, salt, and pepper. Add the tempeh slices and marinate for at least 15 minutes.
  2. Heat a pan over medium heat. Add the marinated tempeh and cook until browned on both sides, about 5 minutes per side.
  3. Warm the pita bread in the oven or on the stovetop.
  4. Spread the tzatziki sauce on the pita bread. Top with the cooked tempeh, tomato, cucumber, red onion, and lettuce.
  5. Fold the pita bread over the fillings and serve the gyros immediately.
