Ingredients

  • Salt and pepper - To taste
  • Dried oregano - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Extra virgin olive oil - 2 tablespoons
  • Parmesan cheese - 1/4 cup, grated
  • Feta cheese - 1/2 cup, crumbled
  • Kalamata olives - 1/2 cup
  • Red onion - 1/2, thinly sliced
  • Tomatoes - 2, diced
  • Cucumber - 1, diced
  • Romaine lettuce - 1 head, chopped

Instructions

  1. In a large bowl, combine the chopped romaine lettuce, diced cucumber, diced tomatoes, thinly sliced red onion, and Kalamata olives.
  2. In a small bowl, whisk together the extra virgin olive oil, lemon juice, dried oregano, salt, and pepper to make the dressing.
