Gluten Free Greek Salad with Quinoa

This refreshing Greek salad is made with quinoa instead of traditional grains, making it gluten-free and packed with protein.

Ingredients

  • Salt and pepper - To taste
  • Dried oregano - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Extra virgin olive oil - 2 tablespoons
  • Fresh parsley - 1/4 cup, chopped
  • Feta cheese - 1/2 cup, crumbled
  • Kalamata olives - 1/4 cup, pitted and halved
  • Red onion - 1/4 cup, thinly sliced
  • Tomatoes - 2, diced
  • Cucumber - 1, diced
  • Quinoa - 1 cup, cooked

Instructions

  1. Cook the quinoa according to package instructions and let it cool.
  2. In a large bowl, combine the cooked quinoa, diced cucumber, diced tomatoes, sliced red onion, halved Kalamata olives, crumbled feta cheese, and chopped fresh parsley.
  3. In a small bowl, whisk together the extra virgin olive oil, lemon juice, dried oregano, salt, and pepper to make the dressing.
