Greek Pita

This Greek pita recipe features a delicious combination of grilled chicken, fresh vegetables, and tangy tzatziki sauce, all wrapped in a warm pita bread.

Ingredients

  • Pita bread - 2, warmed
  • Salt and pepper - To taste
  • Dried oregano - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Red onion - 1/4, thinly sliced
  • Tomato - 1, diced
  • Cucumber - 1/2, diced
  • Greek yogurt - 1/2 cup
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Chicken breast - 2, boneless and skinless

Instructions

  1. In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Mix well.
  2. Add the chicken breasts to the marinade and let them marinate for at least 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Grill the chicken for about 6-8 minutes per side, or until cooked through.
  5. Remove the chicken from the grill and let it rest for a few minutes. Then, slice it into thin strips.
  6. In a separate bowl, combine Greek yogurt, diced cucumber, diced tomato, sliced red onion, chopped parsley, salt, and pepper. Mix well to make the tzatziki sauce.
  7. Warm the pita bread in a toaster or on a grill for a few seconds on each side.
  8. Spread a generous amount of tzatziki sauce on each pita bread.
  9. Top with grilled chicken slices and additional vegetables if desired.
  10. Fold the pita bread in half and serve warm.
