Mediterranean Chicken Pita

This Mediterranean-inspired chicken pita is filled with grilled chicken, fresh vegetables, and a flavorful yogurt sauce.

Ingredients

  • Pita bread - 2
  • Salt and pepper - To taste
  • Fresh parsley - 2 tablespoons, chopped
  • Kalamata olives - 1/4 cup, pitted and sliced
  • Red onion - 1/4, thinly sliced
  • Tomato - 1, diced
  • Cucumber - 1/2, diced
  • Greek yogurt - 1/2 cup
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Chicken breast - 2 boneless, skinless

Instructions

  1. In a bowl, combine olive oil, lemon juice, minced garlic, salt, and pepper. Add the chicken breasts and marinate for 15 minutes.
  2. Preheat a grill or grill pan over medium-high heat. Grill the chicken for 6-8 minutes per side, or until cooked through. Let it rest for a few minutes, then slice it into strips.
  3. In a separate bowl, mix Greek yogurt, diced cucumber, diced tomato, sliced red onion, sliced Kalamata olives, chopped fresh parsley, salt, and pepper to make the yogurt sauce.
  4. Warm the pita bread in a toaster or oven.
  5. Spread a generous amount of the yogurt sauce on each pita bread.
  6. Top with the sliced grilled chicken and additional vegetables if desired.
  7. Fold the pita bread in half and serve.
