German Potato Pancakes

These crispy, savory pancakes are a popular dish in Germany, often served with applesauce or sour cream.

Ingredients

  • Vegetable oil - For frying
  • Pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Flour - 1/4 cup
  • Eggs - 2
  • Onion - 1 medium, finely chopped
  • Potatoes - 4 large, peeled and grated

Instructions

  1. In a large bowl, combine the grated potatoes, chopped onion, eggs, flour, salt, and pepper.
  2. Heat the vegetable oil in a large skillet over medium heat.
  3. Scoop a spoonful of the potato mixture into the skillet and flatten it with the back of the spoon.
  4. Cook the pancake until it's golden brown on both sides, about 3-4 minutes per side.
  5. Repeat with the remaining potato mixture, adding more oil to the skillet as needed.
  6. Serve the pancakes warm, with applesauce or sour cream on the side.
