Potato Pancakes

Crispy and delicious, these potato pancakes are a family favorite. Serve them with applesauce or sour cream for a satisfying side dish or breakfast treat.

Ingredients

  • Vegetable oil - For frying
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Flour - 2 tablespoons
  • Eggs - 2, beaten
  • Onion - 1 small, finely chopped
  • Potatoes - 4 large, peeled and grated

Instructions

  1. Place the grated potatoes in a clean kitchen towel and wring out any excess moisture.
  2. In a large bowl, combine the potatoes, onion, eggs, flour, salt, and pepper.
  3. Heat the oil in a large skillet over medium-high heat.
  4. Drop spoonfuls of the potato mixture into the skillet and flatten with the back of a spoon.
  5. Fry until golden brown on both sides, about 3-4 minutes per side.
  6. Drain on paper towels and serve warm.
