Frittelle Di Riso

Frittelle di Riso are traditional Italian rice fritters, often eaten during Carnivale season or as a delightful dessert or snack year-round.

Ingredients

  • Powdered sugar - For dusting
  • Vegetable oil - For frying
  • Salt - 1/4 teaspoon
  • Baking powder - 1 teaspoon
  • All - purpose flour - 1/2 cup
  • Eggs - 2
  • Lemon zest - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Sugar - 1/2 cup
  • Milk - 1 cup
  • Water - 2 cups
  • Arborio rice - 1 cup

Instructions

  1. In a medium saucepan, combine the rice, water, milk, sugar, vanilla extract, and lemon zest. Bring to a boil, then reduce the heat to low and simmer until the rice is tender and the liquid is absorbed, about 20 minutes. Let cool.
  2. In a large bowl, beat the eggs. Add the cooled rice mixture, flour, baking powder, and salt. Stir until well combined.
  3. Heat the vegetable oil in a deep fryer or large, deep saucepan to 375°F.
  4. Drop spoonfuls of the rice mixture into the hot oil and fry until golden brown, about 2-3 minutes. Use a slotted spoon to remove the fritters from the oil and drain on paper towels.
  5. Dust the fritters with powdered sugar before serving.
