Fresno Chili Mac and Cheese

A spicy twist on a classic comfort food, this Fresno Chili Mac and Cheese is creamy, cheesy, and has a kick of heat from the Fresno chilies.

Ingredients

  • Bread crumbs - 1/2 cup
  • Salt and pepper - To taste
  • Monterey jack cheese - 1 cup, shredded
  • Sharp cheddar cheese - 2 cups, shredded
  • Milk - 2 cups
  • All - purpose flour - 2 tablespoons
  • Fresno chilies - 2, finely chopped
  • Butter - 2 tablespoons
  • Macaroni - 2 cups

Instructions

  1. Preheat the oven to 375°F.
  2. Cook the macaroni according to the package instructions, then drain and set aside.
  3. In a large pot, melt the butter over medium heat. Add the Fresno chilies and cook until softened, about 5 minutes.
  4. Stir in the flour until it forms a paste, then gradually whisk in the milk. Bring to a simmer and cook until the sauce has thickened, about 5 minutes.
  5. Remove the pot from the heat and stir in the cheddar and Monterey Jack cheeses until melted. Season with salt and pepper.
  6. Add the cooked macaroni to the cheese sauce and stir until well coated.
  7. Transfer the macaroni and cheese to a baking dish and sprinkle with the bread crumbs.
  8. Bake for 15 minutes, or until the top is golden and bubbly.
