Ingredients

  • Salt and pepper - To taste
  • Dijon mustard - 1 teaspoon
  • Red wine vinegar - 1 tablespoon
  • Extra virgin olive oil - 2 tablespoons
  • Fresh basil - 1/4 cup, chopped
  • Feta cheese - 1/2 cup, crumbled
  • Kalamata olives - 1/4 cup
  • Red onion - 1/4 cup, thinly sliced
  • Cucumber - 1, sliced
  • Cherry tomatoes - 1 cup, halved
  • Mixed salad greens - 4 cups

Instructions

  1. In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and fresh basil.
  2. In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the vinaigrette dressing.
