Fava Bean Hummus

This fava bean hummus is a delicious twist on traditional hummus, made with fresh fava beans for a unique flavor.

Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Cumin - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Tahini - 2 tablespoons
  • Garlic - 2 cloves
  • Fava beans - 2 cups, shelled

Instructions

  1. Bring a pot of water to a boil and blanch the fava beans for 2 minutes. Drain and rinse with cold water.
  2. Remove the outer skin from the fava beans by gently squeezing them. Discard the skins.
  3. In a food processor, combine the fava beans, garlic, tahini, lemon juice, olive oil, cumin, salt, and paprika. Process until smooth and creamy.
  4. Taste and adjust the seasoning if needed.
  5. Transfer the hummus to a serving bowl and garnish with chopped fresh parsley.
  6. Serve with pita bread or fresh vegetables.
