This refreshing salad combines fava beans, zucchini, and a tangy lemon dressing.
Ingredients
Salt and pepper - To taste
Extra virgin olive oil - 2 tablespoons
Lemon juice - 2 tablespoons
Fresh mint - 1/4 cup, chopped
Cherry tomatoes - 1 cup, halved
Red onion - 1/4 cup, thinly sliced
Zucchini - 2 medium, thinly sliced
Fava beans - 2 cups, shelled
Instructions
Bring a pot of salted water to a boil. Add the fava beans and cook for 2 minutes. Drain and transfer to a bowl of ice water to cool. Peel off the outer skins of the beans.
In a large bowl, combine the fava beans, zucchini, red onion, cherry tomatoes, and fresh mint.
In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
Pour the dressing over the salad and toss to combine.
