Fava Bean and Zucchini Salad

This refreshing salad combines fava beans, zucchini, and a tangy lemon dressing.

Ingredients

  • Salt and pepper - To taste
  • Extra virgin olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh mint - 1/4 cup, chopped
  • Cherry tomatoes - 1 cup, halved
  • Red onion - 1/4 cup, thinly sliced
  • Zucchini - 2 medium, thinly sliced
  • Fava beans - 2 cups, shelled

Instructions

  1. Bring a pot of salted water to a boil. Add the fava beans and cook for 2 minutes. Drain and transfer to a bowl of ice water to cool. Peel off the outer skins of the beans.
  2. In a large bowl, combine the fava beans, zucchini, red onion, cherry tomatoes, and fresh mint.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve chilled and enjoy!
