Fava Bean and Watercress Salad

This refreshing salad combines the earthy flavors of fava beans with the peppery taste of watercress.

Ingredients

  • Salt and pepper - To taste
  • Extra virgin olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Feta cheese - 1/4 cup, crumbled
  • Red onion - 1/4 cup, thinly sliced
  • Cherry tomatoes - 1 cup, halved
  • Watercress - 2 cups
  • Fava beans - 1 cup, shelled

Instructions

  1. Bring a pot of salted water to a boil. Add the fava beans and cook for 2-3 minutes. Drain and rinse with cold water.
  2. Remove the outer skin from the fava beans by gently squeezing them. Set aside.
  3. In a large bowl, combine the watercress, cherry tomatoes, red onion, and feta cheese.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  5. Add the fava beans to the salad and drizzle with the dressing. Toss gently to combine.
  6. Serve the salad chilled and enjoy!
