Fava Bean and Tuna Salad

This refreshing salad combines fava beans, tuna, and a tangy lemon dressing for a light and satisfying meal.

Ingredients

  • Salt and pepper - To taste
  • Extra virgin olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 1/4 cup, chopped
  • Red onion - 1/4 cup, thinly sliced
  • Cherry tomatoes - 1 cup, halved
  • Canned tuna - 1 can, drained
  • Fava beans - 1 cup, shelled

Instructions

  1. Bring a pot of salted water to a boil. Add the fava beans and cook for 3-4 minutes, until tender. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked fava beans, canned tuna, cherry tomatoes, red onion, and fresh parsley.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve the fava bean and tuna salad chilled or at room temperature.
