Fava Bean and Tomato Salad

This refreshing salad combines fava beans, tomatoes, and fresh herbs for a light and flavorful dish.

Ingredients

  • Salt and pepper - To taste
  • Extra virgin olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh mint - 1/4 cup, chopped
  • Fresh parsley - 1/4 cup, chopped
  • Red onion - 1/4 cup, thinly sliced
  • Tomatoes - 2 medium, diced
  • Fava beans - 2 cups, shelled

Instructions

  1. Bring a pot of salted water to a boil. Add the fava beans and cook for 2-3 minutes. Drain and rinse with cold water.
  2. Remove the outer skin from the fava beans by gently squeezing them. Discard the skins.
  3. In a large bowl, combine the fava beans, diced tomatoes, red onion, parsley, and mint.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Let the salad marinate for at least 10 minutes before serving to allow the flavors to meld together.
  7. Serve chilled and enjoy!
