Fava Bean and Yogurt Dip

This creamy and flavorful dip is made with fava beans, yogurt, and fresh herbs.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Greek yogurt - 1 cup
  • Fava beans - 2 cups, cooked and peeled

Instructions

  1. In a food processor, combine the fava beans, Greek yogurt, garlic, lemon juice, mint, parsley, olive oil, salt, and pepper.
  2. Blend until smooth and creamy.
  3. Taste and adjust the seasoning if needed.
  4. Transfer the dip to a serving bowl.
  5. Garnish with a drizzle of olive oil and some chopped fresh herbs.
  6. Serve with pita bread or vegetable sticks.
