Fava Bean and White Bean Dip

This creamy and flavorful dip is made with fava beans, white beans, garlic, lemon juice, and herbs.

Ingredients

  • Salt and pepper - To taste
  • Fresh mint - 1 tablespoon, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • White beans - 1 cup, cooked
  • Fava beans - 1 cup, cooked and peeled

Instructions

  1. In a food processor, combine the fava beans, white beans, garlic, lemon juice, olive oil, parsley, mint, salt, and pepper.
  2. Blend until smooth and creamy, scraping down the sides as needed.
  3. Taste and adjust the seasoning if needed.
  4. Transfer the dip to a serving bowl and garnish with a drizzle of olive oil and a sprinkle of chopped parsley.
  5. Serve with pita chips, crackers, or fresh vegetables.
