Fava Bean and Lemon Dip

This refreshing dip is made with fava beans, fresh lemon juice, and herbs. It's perfect for serving as an appetizer or snack.

Ingredients

  • Black pepper - To taste
  • Salt - To taste
  • Fresh mint - 1 tablespoon, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fava beans - 2 cups, shelled

Instructions

  1. Bring a pot of water to a boil and blanch the fava beans for 2 minutes. Drain and rinse with cold water.
  2. Remove the outer skin from the fava beans by gently squeezing them.
  3. In a food processor, combine the fava beans, minced garlic, lemon juice, olive oil, parsley, mint, salt, and black pepper.
  4. Blend until smooth and creamy, adding more olive oil if needed to reach desired consistency.
  5. Taste and adjust the seasoning if necessary.
  6. Transfer the dip to a serving bowl and garnish with a drizzle of olive oil and a sprinkle of chopped parsley.
  7. Serve with pita bread, crackers, or fresh vegetables.
