Ingredients

  • Salt and pepper - To taste
  • Dijon mustard - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh mint leaves - 1/4 cup, chopped
  • Feta cheese - 1/4 cup, crumbled
  • Red onion - 1/4 cup, thinly sliced
  • Cherry tomatoes - 1 cup, halved
  • Mixed greens - 4 cups
  • Fava beans - 1 cup, shelled
  • Steak - 8 oz

Instructions

  1. Season the steak with salt and pepper. Heat a grill or grill pan over medium-high heat and cook the steak to your desired doneness. Let it rest for 5 minutes, then slice it thinly.
  2. In a large bowl, combine the fava beans, mixed greens, cherry tomatoes, red onion, feta cheese, and mint leaves.
  3. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper to make the vinaigrette.
