Ingredients

  • Salt and pepper - To taste
  • Dijon mustard - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 1/4 cup, chopped
  • Cherry tomatoes - 1 cup, halved
  • Red onion - 1/4 cup, thinly sliced
  • Mushrooms - 8 ounces, sliced
  • Fava beans - 2 cups, shelled

Instructions

  1. Bring a pot of salted water to a boil. Add the fava beans and cook for 3-4 minutes, then drain and rinse with cold water.
  2. In a large bowl, combine the cooked fava beans, sliced mushrooms, red onion, cherry tomatoes, and chopped parsley.
  3. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper to make the vinaigrette.
  4. Pour the vinaigrette over the salad and toss to coat evenly.
