Fava Bean and Spinach Salad

This refreshing salad combines fava beans, spinach, and a tangy lemon dressing.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh mint leaves - 1/4 cup, chopped
  • Feta cheese - 1/2 cup, crumbled
  • Cherry tomatoes - 1 cup, halved
  • Red onion - 1/4 cup, thinly sliced
  • Spinach - 4 cups, fresh
  • Fava beans - 2 cups, shelled

Instructions

  1. Bring a pot of salted water to a boil. Add the fava beans and cook for 2 minutes. Drain and rinse with cold water.
  2. Remove the outer skin from the fava beans by gently squeezing them. Set aside.
  3. In a large bowl, combine the spinach, red onion, cherry tomatoes, feta cheese, and fresh mint leaves.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
  5. Pour the dressing over the salad and toss to coat evenly.
  6. Add the fava beans to the salad and gently toss to combine.
  7. Serve the salad chilled and enjoy!
