Fava Bean and Smoked Salmon Crostini

These delicious crostini are topped with creamy fava bean spread and smoked salmon, perfect for appetizers or a light meal.

Ingredients

  • Fresh dill - For garnish
  • Smoked salmon - 6 ounces
  • Baguette - 1, sliced
  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fava beans - 1 cup, shelled

Instructions

  1. Bring a pot of water to a boil and blanch the fava beans for 2 minutes. Drain and rinse with cold water.
  2. Remove the outer skins from the fava beans.
  3. In a food processor, combine the fava beans, minced garlic, lemon juice, olive oil, salt, and pepper. Process until smooth and creamy.
  4. Preheat the oven to 350°F.
  5. Place the baguette slices on a baking sheet and toast in the oven for 5-7 minutes, or until crispy.
  6. Spread the fava bean mixture onto the toasted baguette slices.
  7. Top each crostini with a slice of smoked salmon.
  8. Garnish with fresh dill.
