Fava Bean and Mint Crostini

These fava bean and mint crostini are a fresh and flavorful appetizer, perfect for any occasion.

Ingredients

  • Salt and pepper - To taste
  • Lemon juice - 1 tablespoon
  • Fresh mint leaves - 1/4 cup, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Baguette - 1, sliced
  • Fava beans - 2 cups, shelled

Instructions

  1. Bring a pot of water to a boil and blanch the fava beans for 2 minutes. Drain and rinse with cold water.
  2. Remove the outer skin from the fava beans by gently squeezing them. Set aside.
  3. Preheat the oven to 350°F.
  4. Brush the baguette slices with olive oil and place them on a baking sheet. Bake for 5-7 minutes, or until crispy.
  5. In a bowl, combine the fava beans, minced garlic, chopped mint leaves, lemon juice, salt, and pepper. Mix well.
  6. Spread the fava bean mixture onto the toasted baguette slices.
