Fava Bean and Prosciutto Crostini

These delicious crostini are topped with creamy fava bean spread and crispy prosciutto.

Ingredients

  • Fresh basil leaves - 6 leaves
  • Prosciutto - 6 slices
  • Baguette - 1, sliced
  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fava beans - 2 cups, shelled

Instructions

  1. Bring a pot of water to a boil and blanch the fava beans for 2 minutes. Drain and transfer to an ice bath to cool.
  2. Peel the outer skin of the fava beans to reveal the bright green beans inside.
  3. In a food processor, combine the fava beans, minced garlic, lemon juice, olive oil, salt, and pepper. Blend until smooth and creamy.
  4. Preheat the oven to 350°F.
  5. Place the baguette slices on a baking sheet and toast in the oven for 5 minutes, or until crispy.
  6. In a skillet, cook the prosciutto slices over medium heat until crispy, about 2 minutes per side.
  7. Spread the fava bean mixture onto the toasted baguette slices.
  8. Top each crostini with a piece of crispy prosciutto and a fresh basil leaf.
  9. Serve immediately and enjoy!
