Ensalada Mixta

Ensalada Mixta is a classic Spanish mixed salad made with fresh vegetables and a simple vinaigrette dressing.

Ingredients

  • Salt and pepper - To taste
  • Dried oregano - 1 teaspoon
  • Red wine vinegar - 1 tablespoon
  • Extra virgin olive oil - 2 tablespoons
  • Feta cheese - 1/2 cup, crumbled
  • Green olives - 1/4 cup, pitted
  • Red onion - 1/2 small, thinly sliced
  • Cucumber - 1, sliced
  • Tomatoes - 2 medium, sliced
  • Lettuce - 1 head, torn into bite-sized pieces

Instructions

  1. In a large salad bowl, combine the torn lettuce, sliced tomatoes, cucumber, red onion, green olives, and crumbled feta cheese.
  2. In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper to make the vinaigrette dressing.
  3. Drizzle the dressing over the salad and toss gently to coat all the ingredients.
  4. Serve immediately and enjoy!
