Endive with Roasted Garlic Dip

This appetizer features crisp endive leaves served with a creamy roasted garlic dip.

Ingredients

  • Chives - 2 tablespoons, chopped
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Mayonnaise - 1/4 cup
  • Sour cream - 1/2 cup
  • Cream cheese - 8 oz
  • Garlic - 1 bulb
  • Endive - 3 heads

Instructions

  1. Preheat the oven to 400°F.
  2. Cut the top off the garlic bulb to expose the cloves. Drizzle with olive oil and wrap in aluminum foil.
  3. Roast the garlic in the oven for 30 minutes, or until soft and golden.
  4. Remove the roasted garlic from the oven and let it cool.
  5. In a mixing bowl, combine the cream cheese, sour cream, mayonnaise, lemon juice, salt, and black pepper.
  6. Squeeze the roasted garlic cloves out of their skins and add them to the bowl.
  7. Mix well until all the ingredients are combined and the dip is smooth.
  8. Separate the endive leaves and arrange them on a serving platter.
  9. Serve the endive leaves with the roasted garlic dip on the side.
  10. Garnish with chopped chives before serving.
