Endive and Fig Crostini

These endive and fig crostini are a perfect combination of sweet and savory flavors. The creamy goat cheese, fresh figs, and crunchy endive create a delicious appetizer or snack.

Ingredients

  • Salt and pepper - To taste
  • Fresh thyme - 1 tbsp, chopped
  • Balsamic glaze - 2 tbsp
  • Honey - 2 tbsp
  • Endive - 2 heads
  • Fresh figs - 6
  • Goat cheese - 4 oz
  • Baguette - 1

Instructions

  1. Preheat the oven to 375°F.
  2. Slice the baguette into 1/2-inch thick slices and arrange them on a baking sheet.
  3. Toast the baguette slices in the oven for about 5 minutes, or until they are lightly golden and crispy.
  4. In a small bowl, mix the goat cheese with the chopped thyme, salt, and pepper.
  5. Spread a generous amount of the goat cheese mixture onto each toasted baguette slice.
  6. Trim the endive heads and separate the leaves.
  7. Place a few endive leaves on top of each crostini, creating a bed for the figs.
  8. Slice the fresh figs into thin rounds and place a few slices on top of the endive leaves.
  9. Drizzle each crostini with honey and balsamic glaze.
  10. Serve immediately and enjoy!
