Endive and Chicken Salad

This refreshing endive and chicken salad is packed with flavors and textures.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh basil - 1/4 cup, chopped
  • Kalamata olives - 1/4 cup, pitted and halved
  • Feta cheese - 1/2 cup, crumbled
  • Red onion - 1/4 cup, thinly sliced
  • Cucumber - 1, sliced
  • Cherry tomatoes - 1 cup, halved
  • Chicken breast - 2, cooked and shredded
  • Endive - 2 heads, separated into leaves

Instructions

  1. In a large bowl, combine the endive leaves, shredded chicken, cherry tomatoes, cucumber, red onion, feta cheese, Kalamata olives, and fresh basil.
  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
  3. Drizzle the dressing over the salad and toss gently to coat.
