Tahini Salad

This refreshing tahini salad is packed with fresh vegetables and drizzled with a creamy tahini dressing.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Lemon juice - 2 tablespoons
  • Tahini - 2 tablespoons
  • Feta cheese - 1/4 cup, crumbled
  • Kalamata olives - 1/4 cup
  • Red onion - 1/4 cup, thinly sliced
  • Cherry tomatoes - 1 cup, halved
  • Cucumber - 1, sliced
  • Mixed greens - 4 cups

Instructions

  1. In a large bowl, combine the mixed greens, cucumber, cherry tomatoes, red onion, kalamata olives, and feta cheese.
  2. In a small bowl, whisk together the tahini, lemon juice, garlic, olive oil, salt, and pepper to make the dressing.
  3. Drizzle the dressing over the salad and toss to coat evenly.
