Endive, Lentil, and Walnut Salad

This refreshing salad combines the bitterness of endive, the earthiness of lentils, and the crunch of walnuts.

Ingredients

  • Salt and pepper - To taste
  • Dijon mustard - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 1/4 cup, chopped
  • Feta cheese - 1/2 cup, crumbled
  • Dried cranberries - 1/4 cup
  • Red onion - 1/4 cup, thinly sliced
  • Walnuts - 1/2 cup, chopped
  • Lentils - 1 cup, cooked
  • Endive - 2 heads, separated into leaves

Instructions

  1. In a large bowl, combine the endive leaves, cooked lentils, chopped walnuts, sliced red onion, dried cranberries, crumbled feta cheese, and chopped parsley.
  2. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper to make the dressing.
