This refreshing green bean and walnut salad is packed with flavor and crunch.
Ingredients
Salt and pepper - To taste
Dijon mustard - 1 teaspoon
Olive oil - 2 tablespoons
Lemon juice - 2 tablespoons
Fresh parsley - 1/4 cup, chopped
Feta cheese - 1/4 cup, crumbled
Red onion - 1/4 cup, thinly sliced
Walnuts - 1/2 cup, chopped
Green beans - 1 pound, trimmed
Instructions
Bring a pot of salted water to a boil. Add the green beans and cook for 3-4 minutes, until crisp-tender. Drain and rinse with cold water to stop the cooking process.
In a large bowl, combine the green beans, walnuts, red onion, feta cheese, and parsley.
In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper.
Pour the dressing over the salad and toss to coat evenly.
