This refreshing salad combines crisp endive, tender asparagus, and a tangy vinaigrette dressing.

Ingredients

  • Salt and pepper - To taste
  • Honey - 1 teaspoon
  • Dijon mustard - 1 teaspoon
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Walnuts - 1/4 cup, chopped
  • Feta cheese - 1/2 cup, crumbled
  • Red onion - 1/4 cup, thinly sliced
  • Cherry tomatoes - 1 cup, halved
  • Asparagus - 1 bunch, trimmed and blanched
  • Endive - 2 heads, separated into leaves

Instructions

  1. In a large bowl, combine the endive leaves, blanched asparagus, cherry tomatoes, red onion, feta cheese, walnuts, and parsley.
  2. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey, salt, and pepper to make the vinaigrette dressing.
  3. Drizzle the dressing over the salad and toss gently to coat.
