This delicious pizza features roasted eggplant, caramelized onions, and gooey cheese on a crispy crust.

Ingredients

  • Salt and pepper - To taste
  • Fresh basil - 1/4 cup, chopped
  • Parmesan cheese - 1/4 cup, grated
  • Mozzarella cheese - 1 cup, shredded
  • Balsamic vinegar - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Onion - 1 large, thinly sliced
  • Eggplant - 1 medium, sliced
  • Pizza dough - 1 pound

Instructions

  1. Preheat the oven to 425°F.
  2. Place the sliced eggplant on a baking sheet and drizzle with olive oil. Season with salt and pepper.
  3. Roast the eggplant in the preheated oven for 15-20 minutes, or until tender and slightly browned.
  4. While the eggplant is roasting, heat 1 tablespoon of olive oil in a skillet over medium heat.
  5. Add the sliced onion and cook, stirring occasionally, until caramelized, about 10 minutes.
  6. Remove the roasted eggplant from the oven and let it cool slightly.
  7. Roll out the pizza dough on a floured surface to your desired thickness.
  8. Transfer the rolled-out dough to a baking sheet or pizza stone.
  9. Brush the dough with the remaining tablespoon of olive oil.
  10. Spread the caramelized onions evenly over the dough.
  11. Arrange the roasted eggplant slices on top of the onions.
  12. Drizzle the balsamic vinegar over the pizza.
  13. Sprinkle the shredded mozzarella and grated Parmesan cheese over the toppings.
  14. Bake the pizza in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is melted and bubbly.
  15. Remove the pizza from the oven and sprinkle with fresh chopped basil.
  16. Let the pizza cool for a few minutes before slicing and serving.
