Durvud Poodash

Durvud Poodash is a traditional Persian dish made with lamb, lentils, and a blend of aromatic spices.

Ingredients

  • Lemon juice - 2 tablespoons
  • Fresh cilantro - 1/4 cup, chopped
  • Water - 4 cups
  • Vegetable oil - 2 tablespoons
  • Salt and pepper - To taste
  • Cardamom - 1/2 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Cumin - 1 teaspoon
  • Turmeric - 1 teaspoon
  • Garlic - 4 cloves, minced
  • Onion - 1 large, finely chopped
  • Yellow lentils - 1 cup
  • Lamb - 1 kg, cubed

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until golden brown.
  3. Add the cubed lamb and cook until browned on all sides.
  4. Add the lentils, turmeric, cumin, cinnamon, cardamom, salt, and pepper. Stir well to coat the ingredients with the spices.
  5. Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 1.5 to 2 hours, or until the lamb and lentils are tender.
  6. Once cooked, remove from heat and stir in the fresh cilantro and lemon juice.
  7. Serve hot with steamed rice or bread.
