Loobia Chiti is a delicious Persian dish made with green beans, meat, and aromatic spices.
Ingredients
Fresh cilantro - 2 tablespoons, chopped
Lemon juice - 1 tablespoon
Vegetable oil - 2 tablespoons
Water - 2 cups
Salt and pepper - To taste
Cinnamon - 1/2 teaspoon
Cumin - 1 teaspoon
Turmeric - 1 teaspoon
Tomato paste - 2 tablespoons
Garlic - 3 cloves, minced
Onion - 1 large, finely chopped
Beef or lamb - 300 grams, cubed
Green beans - 500 grams
Instructions
Heat the vegetable oil in a large pot over medium heat.
Add the chopped onion and minced garlic. Sauté until golden brown.
Add the cubed meat and cook until browned on all sides.
Add the tomato paste, turmeric, cumin, cinnamon, salt, and pepper. Stir well to coat the meat.
Add the green beans and water. Bring to a boil, then reduce the heat and simmer for 45 minutes, or until the meat is tender and the green beans are cooked.
Stir in the lemon juice and fresh cilantro. Cook for an additional 5 minutes.
