Cold Ramen

This refreshing cold ramen dish is perfect for hot summer days. It features chilled noodles, fresh vegetables, and a tangy sesame dressing.

Ingredients

  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Sesame oil - 1 tablespoon
  • Honey - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Lime - 1, juiced
  • Sesame seeds - 1 tablespoon
  • Fresh cilantro - 1/4 cup, chopped
  • Green onions - 2, thinly sliced
  • Red bell pepper - 1, thinly sliced
  • Carrot - 1, julienned
  • Cucumber - 1, thinly sliced
  • Ramen noodles - 2 packs

Instructions

  1. Cook the ramen noodles according to package instructions. Drain and rinse with cold water to cool them down.
  2. In a large bowl, combine the cucumber, carrot, red bell pepper, green onions, and cilantro.
  3. In a small bowl, whisk together the lime juice, soy sauce, rice vinegar, honey, sesame oil, garlic, and ginger to make the dressing.
  4. Add the cooled noodles to the bowl with the vegetables and pour the dressing over the top. Toss to combine.
  5. Garnish with sesame seeds and serve chilled.
