Chilli Crab

Chilli Crab is a popular Singaporean seafood dish made with fresh crabs cooked in a spicy and tangy tomato-based sauce.

Ingredients

  • Salt - To taste
  • Cilantro - 2 tablespoons, chopped
  • Green onions - 2 stalks, chopped
  • Cornstarch - 1 tablespoon, dissolved in 2 tablespoons of water
  • Chicken broth - 1 cup
  • Sugar - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Ketchup - 3 tablespoons
  • Tomato paste - 2 tablespoons
  • Red chili peppers - 2, sliced
  • Ginger - 1 tablespoon, grated
  • Garlic - 4 cloves, minced
  • Vegetable oil - 3 tablespoons
  • Crabs - 2 large, cleaned and cut into pieces

Instructions

  1. Heat the vegetable oil in a large wok or pan over medium heat.
  2. Add the minced garlic, grated ginger, and sliced red chili peppers. Stir-fry for 1-2 minutes until fragrant.
  3. Add the tomato paste, ketchup, soy sauce, sugar, and chicken broth. Stir well to combine.
  4. Bring the sauce to a simmer and cook for 5 minutes, stirring occasionally.
  5. Add the crab pieces to the sauce and toss to coat them evenly. Cover the wok or pan and cook for 10-15 minutes, or until the crabs are cooked through.
  6. Remove the lid and stir in the dissolved cornstarch mixture. Cook for an additional 2-3 minutes until the sauce thickens.
  7. Season with salt to taste.
  8. Garnish with chopped green onions and cilantro.
  9. Serve hot with steamed rice or crusty bread.
