Sweet and Sour Tofu Stir Fry

This delicious sweet and sour tofu stir fry is packed with flavor and makes a satisfying vegetarian meal.

Ingredients

  • Sesame seeds - 1 tablespoon, for garnish
  • Green onions - 2, sliced, for garnish
  • Cooked rice - 4 cups, for serving
  • Black pepper - To taste
  • Salt - To taste
  • Vegetable oil - 2 tablespoons
  • Water - 1/4 cup
  • Cornstarch - 1 tablespoon
  • Brown sugar - 2 tablespoons
  • Ketchup - 2 tablespoons
  • Rice vinegar - 2 tablespoons
  • Soy sauce - 3 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Carrot - 1, sliced
  • Pineapple chunks - 1 cup
  • Onion - 1, sliced
  • Bell peppers - 2, sliced
  • Firm tofu - 1 block, cubed

Instructions

  1. In a small bowl, whisk together soy sauce, rice vinegar, ketchup, brown sugar, cornstarch, and water to make the sweet and sour sauce. Set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add tofu cubes and cook until golden brown on all sides. Remove tofu from the skillet and set aside.
  4. In the same skillet, add sliced bell peppers, onion, carrot, garlic, and grated ginger. Stir fry for 3-4 minutes, until vegetables are slightly tender.
  5. Add pineapple chunks and cooked tofu back to the skillet.
  6. Pour the sweet and sour sauce over the tofu and vegetables. Stir well to coat everything evenly.
  7. Cook for an additional 2-3 minutes, until the sauce thickens and coats the tofu and vegetables.
  8. Season with salt and black pepper to taste.
  9. Serve the sweet and sour tofu stir fry over cooked rice.
  10. Garnish with sliced green onions and sesame seeds.
