Crystal Prawn

Crystal Prawn is a classic Chinese dish that features succulent prawns in a sweet and tangy sauce.

Ingredients

  • Green onions - 2, chopped
  • Chicken broth - 1/2 cup
  • Vinegar - 1 tablespoon
  • Sugar - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • White wine - 2 tablespoons
  • Ginger - 1 inch piece, minced
  • Garlic - 2 cloves, minced
  • Vegetable oil - For frying
  • White pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Egg white - 1
  • Cornstarch - 2 tablespoons
  • Prawns - 500 grams, peeled and deveined

Instructions

  1. In a bowl, combine prawns, cornstarch, egg white, salt, and white pepper. Mix well and set aside for 15 minutes.
  2. Heat oil in a wok or large frying pan over medium-high heat. Add prawns and fry until they turn pink, about 2-3 minutes. Remove prawns and set aside.
  3. In the same wok, add garlic and ginger and stir-fry until fragrant.
  4. Add white wine, soy sauce, sugar, vinegar, and chicken broth. Bring to a boil.
  5. Return the prawns to the wok and stir-fry for another 2 minutes, or until the prawns are coated with the sauce.
  6. Garnish with chopped green onions and serve.
