Castagnole

Castagnole are sweet Italian pastries that are typically served during Carnival. They are small, round, and often filled with custard or jam.

Ingredients

  • Powdered sugar - For dusting
  • Vegetable oil - For frying
  • Vanilla extract - 1 teaspoon
  • Rum - 1 tablespoon
  • Lemon zest - 1 teaspoon
  • Butter - 4 tablespoons, melted
  • Eggs - 2
  • Salt - 1/4 teaspoon
  • Baking powder - 1 teaspoon
  • Sugar - 1/2 cup
  • All - purpose flour - 2 cups

Instructions

  1. In a large bowl, combine the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together the eggs, melted butter, lemon zest, rum, and vanilla extract.
  3. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
  4. Roll the dough into small balls, about the size of a chestnut.
  5. Heat the vegetable oil in a deep fryer or large pot to 375°F.
  6. Fry the dough balls in batches until golden brown, about 2-3 minutes.
  7. Drain on paper towels and let cool.
  8. Dust with powdered sugar before serving.
