Ingredients

  • Salt and pepper - To taste
  • Honey - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh cilantro - 1/4 cup, chopped
  • Green onions - 4, sliced
  • Red bell pepper - 1, diced
  • Cucumber - 1, diced
  • Carrots - 2 large, grated
  • Brown rice - 1 cup, cooked

Instructions

  1. In a large bowl, combine the cooked brown rice, grated carrots, diced cucumber, diced red bell pepper, sliced green onions, and chopped cilantro.
